Hedges Family, Cabernet Sauvignon "C.M.S." Columbia Valley, Washington 2021
Hedges Family, Cabernet Sauvignon "C.M.S." Columbia Valley, Washington 2021
76% Cabernet Sauvignon, 16% Syrah, 8% Merlot.
Dark magenta color. Dark, rich berries, cocoa, vanilla, dried sage, and cinnamon. Full-bodied with flavors of toasty blackberry, toffee, chocolate, leather and a touch of cassis.
So much fruit in this wine. The mix of intense fruit, dark cocoa, vanilla, dried herbs and tobacco is very classic Cabernet, but the Syrah and Merlot add a softness and smoothness to the palate that really make this wine a pleasant experience whether it's sipping with friends or paired with a serious meal.
The grapes were sourced from Sagemoor, Wooded Island and Bacchus vineyards in the Columbia Valley AVA and Hedges Estate, Jolet and Les Gosses vineyards in the Red Mountain AVA. The must was pumped-over for 8 days and pressed to tank, where it underwent malo-lactic fermentation. The Columbia Valley portion of this wine was fermented to dryness on 100% American Oak and aged on 100% French oak. It was barrel aged for 5 months in 100% neutral oak. The Red Mountain AVA wines were barrel aged in 100% neutral American and French oak for 11 months.
Low intervention, unfiltered.
