The Tres Miradas project represents a search for the expression of a terroir historically known as Sierra de Montilla. This wine has been made with Pedro Ximenez grapes from old bush vines, from different plots of the Riofrío and Ladera de Benavente areas. The grapes were directly pressed and then fermented in the traditional concrete jars, tinajas, of 4800L. After the fermentation the wine stays in tinajas for 8 more months (or until the following spring) under “velo de flor” (natural yeast layer).
Pale yellow with greenish hue, this wine's aroma shows varietal notes of Pedro Ximenez such as green and yellow apple, pear, wild fennel, and hay. Notes of the “velo de flor” yeast, raw almonds, and bread dough. Silex hints in the background. On the palate, the wine has a fresh and dry entry. It is full of green and yellow apples and pears and citric notes, hints of raw almonds and dough, and a herbaceous and mineral background. With a silky texture, it is well balanced and persistent.
A versatile wine, perfect with raw fish, sushi and sea food. Goes well with light tapas and starters.
