This is Brooklyn Kura's second Dai Ginjo, named after the Catskill Mountains which is the source of their water. Dai Ginjo is considered a super premium style of sake due to the effort, time, and cost that goes into its production. They use 100% sake brewers rice (yamada nishiki), a single modern yeast, and don't let the fermentation go above 11 degrees celsius. The result is intended to be delicate and luxurious.
Light bodied, delicate on the palate with aromas of white flower and green fruits. A fresh nose of tropical fruit and delicate citrus notes & a hint of vanilla. Finishes with well balanced acidity & smooth creaminess. The nuanced flavors and delicate textures are difficult for even experienced brewers to achieve — this is an example bursting with flavors of fresh fruit, a uniquely American take on the most expressive of sake styles.
Pair with delicate whitefish, raw oysters with mignonette, or freshly sliced fruit like canteloupe and strawberries.
